The meaning of Ganesh riding a mouse is that heavy like elephant gurus are living on the cost of poor householders. I have not heard clarification about Kartikey, but as peacock is simbolic for purity it may be something connected with purity.

Imo, Ganesh is not one soul Lekhraj Kirpalani , but 108 shivshaktis are numberwise Ganesh(popularly known as parvati putra.)
Ganesh is also known as buddhi-nath ie God of wisdom (because only 108 recognise combined mat-pita adishakti) and is also known as vigna-vinashak(remover of obstacle) as only 108 souls overcome the obstacle of mayavi adv-Gyan to become mayajeet.

It is Father Shiv who enables us to cross the obstacles. But when one does not have any faith either on Shiv or on any soul, such questions are raised. It was through Brahma Baba that the Yagya was managed by Shiv from 1947 to 1969.

The matter about why Ganesh, Lakshmi and Saraswati are shown together is discussed in discussion 1370 at 52:45 min. It sais that the soul of Saraswati, that is Om Radhe, enters and plays role into Lakshmi, so they are together. The soul of Ganesh is son of Lakshmi or Parvati, it will become son of Lakshmi in Satyug. And the soul of Saraswati in the Confluence Age, that enters and plays role into Lakshmi, when Lakshmi attains its complete form, that soul takes birth from Lakshmi through the womb of the intellect or through the phisical womb. The three are together, thats why they are shown together.
